Hello Ann! If it has a yolk then it has cholesterol, although it is possible that Arucanas hens lay eggs that have less cholesterol than the average chicken. The fact that your hens are free-range hens automatically assures that your eggs have lower levels of cholesterol and higher levels of healthy omega-3 fatty acids. I do not worry about the cholesterol found in eggs as studies have shown that egg intake does not result in appreciable elevations in blood cholesterol. In fact, some studies have found that eating 15 eggs a week has no impact on blood cholesterol at all. So, ENJOY YOUR EGGS!

I love egg I have 8 hens all free-range. A rooster and 2 of the hens are Arucanas; I was told that this type of egg don't have cholesterol? I don't have any challenges with cholesterol, but if true is it ok to eat?

Good stuff Blythe. This is exactly (or egg-xactly?) how I cook boiled eggs. Cooking them this way also prevents the ugly gray around the yolk (if presentation matters to you)... Keep up the good work!

Yes! eggs are a great protein filled snack. 2-3 whole eggs per day should be fine. However, if high-cholesterol is a problem you have, you may want to keep that in mind when you are eating the yolks. I eat 2-3 whole eggs most days and the rest whites only. I personally strive for about 40g healthy WHOLE FOOD fats daily and eggs help me reach that goal and high cholesterol doesn't run in my family. If you would like help with a nutritional plan, I'd be happy to have you on board! Thanks Kay!
